Carlos opened our eyes and palates to the world of sherry and to the surprising taste sensations when good sherry is married with great food. "Carlos is the perfect local guide! He is from the local area, well-versed in the local history. He is passionate about Spain and the local food/wine/sherry/culture. It was a joy to spend the day with him at Bolonia (Roman ruins on the southwestern coast of Spain)and we had a fabulous, long and amazing lunch at Otero right next to the ruins. The clams in garlic/olive oil/parsley were to die for!! And the fried sea anemones were the best I’ve ever had. Carlos is an amazing chef and is a wealth of knowledge for the local cuisine and local ingredients. I keep falling in love with Southern Spain more every time I’m here. You won’t be disappointed.
